Baldur’s Whisky Debuts Canadian Bourbon-Style Release

Co-founders Colin Schmidt and Braeden Raiwet began developing this concept over six years ago, aiming to create a uniquely Canadian take on bourbon during a time of renewed tariff discussions.

Lumsden, SK — Baldur’s Whisky, crafted by Last Mountain Distillery, is set to launch its third release: a Bourbon-Style Canadian Whisky.

The whisky features a traditional bourbon mash bill—at least 51% corn, with wheat, rye, and malted barley—distilled to 62.5% ABV and aged in charred American oak barrels. Three years ago, the team added a sour mash starter using Lactobacillus delbrueckii, enhancing the whisky’s character. Head Distiller Darcy Cornelius oversaw the production, dedicating significant resources to perfecting this bold expression.

While Canadian regulations prevent labeling it as bourbon, the whisky offers classic notes of sweet corn, honey, and vanilla with a rye-spiced finish. Thanks to updated interprovincial shipping laws, Baldur’s Bourbon-Style Whisky will be available nationwide. Last Mountain Distillery, Saskatchewan’s first micro-distillery, continues its tradition of crafting premium spirits from the heart of grain country.
